It's that time of year again - fresh produce! Our family loves White Acre Peas so we got 3 bushels already shelled at $20 each the other day and I've been busy putting them up. It's important that you blanch them before you freeze them for winter. Blanching breaks down fibers and prevents them from becoming mushy when you thaw them out.
If you're not familiar on how to put up peas this is how I do it:
- Bring a big pot of water to a rolling boil over high heat.
- Put in peas and cook for about 2 minutes.
- Drain them and allow to cool before placing in freezer bags.
- Freeze
It's time consuming, but well worth it. Next, I'll be working on tomatoes and if I can get a good price on blueberries I'll be making some yummy jam! I feel like a squirrel.
