While I was out yesterday I found a loaf of French Baguette on clearance for $.50 at a discount grocery store. I grabbed it because I knew that even if it was a little stale I could use it for something. When I got home I looked through my fridge and pantry and came up with the idea to make Bruschetta. You have to toast the bread anyway so that worked out just fine. I had some canned tomatoes in the pantry and had an onion that I needed to use up before it headed south. I also had the President Feta Cheese left that I bought a few weeks ago at Publix - that would make a great topping. So here's the recipe to my frugal Bruschetta:
Preheat your oven to 350 degrees.
Cut your French Baguette into 3/4 inch slices and brush with extra virgin olive oil.
Toast for about 10 minutes.
While the bread is in the oven open a can of diced tomatoes and drain. Add 1/2 small onion chopped, 1/2 teaspoon garlic powder, 1/4 teaspoon salt and 1/4 teaspoon ground black pepper. Mix well.
Place the tomato mixture on the slices of baguette. Top with any type cheese you like - I had feta so I used that.
Place back in the oven for 5-10 minutes - just enough to warm it up.
It's not as involved as most bruschetta recipes, but it worked for us and was delicious!
