Do you have a funky spud growing in your pantry? Make baby spuds! Years ago my daddy was at my house when I was cleaning the kitchen and I came across a potato that had wilted a little and was growing all funky. I told him how I absolutely hated wasting food - something he instilled in me. And he said "Well, honey, just plant it and make a potato bed." And since then my wilted potatoes go into our potato bed! My son, who shares my love for growing things, regularly goes through our vegetable bin and looks for funky potatoes because he wants to plant them. :o)
This is how we do it (I know there are several versions):
You'll need a large container - or make one with wire. It has to be deep because as the potatoes grow you'll need to add more soil. We used old coolers that have become yucky when we first started.
Place a layer of soil in the bottom. I also include some dry leaves or pine straw. But don't use too much pine straw because it's really acidic and can rot your potatoes. Put in the potatoes and cover with soil.
In 3-4 weeks you should see some sprouts at the top. Add more soil. Keep doing this for several weeks. You'll need to keep checking for potatoes and try to harvest them as they get big enough.
