I'm aiming for simple meals because it will be a busy/strange week for us. I have meetings and the kids have activities so this plan may change. C'est la vie.
My son had a doctor's appointment last week so I stopped in at Whole Foods since I was on that side of town. I picked up some organic Japanese Sweet potatoes, organic Purple Sweet Potatoes, organic Delicata Squash and some Siete items that were on sale (and had cash back from Ibotta.) Whole Foods is the only place in my area that carries these types of potatoes and squash. I was happy they were on sale.
Dinner:
Chicken and Rice with Green Beans
Turkey Sausage with Tomatoes, Pinto Beans and Rice
Slow Cooker Marry Me Chicken with Quinoa and Baked Delicata Squash
Turkey Chili with corn muffins
Hawaiian Sheet Pan Chicken with Rice and baked sweet potatoes
Fettucine Alfredo with broccoli and garlic toast
Tacos/Taco Bowls with Buttery Turmeric Rice
Lunch:
Leftovers
Cottage Cheese bowls with chicken sausage
Homemade tomato soup with grilled cheese
(2) Business Lunches for me
Breakfast:
Lemon Blueberry Muffins with Greek Yogurt
Scrambled eggs with grits and sausage (2 days)
Avocado Toast with boiled eggs (2 days)
Cottage cheese egg muffins with fruit (2 days)
