Menu Plan for Week of 1/6/25

 


I accidentally ordered two 25 lb bags of jasmine rice from Sam's Club, but only meant to order one. 😁 So you'll see a lot of rice in our menu plans for a bit. When I remember, I cook the rice ahead of time and chill in the fridge overnight lowering the carb content. 


Dinner:

Buffalo Chicken Pasta Bake with Zucchini

Chicken & Broccoli Stir Fry with Fried Rice

Meatloaf with mashed potatoes & sweet potatoes

Burrito bowls with rice

Hamburger Steaks with zucchini, onions and rice

Greek Chicken Bowls with cauliflower rice and pita bread

Meatballs in tomato sauce with rice and green beans


Lunch:

Cottage Cheese Bowls with chicken sausage

Meal-prepped Burrito Bowls with chicken and steak

Sandwiches

Leftovers


Breakfast:

Boiled eggs

yogurt with fruit

avocado toast

scrambled eggs and grits
