As I was cleaning out my fridge today I found some zucchini and onions that were getting a little too ripe. Like a true frugal person I used them up before they went bad. I just chopped them up into small pieces and added olive oil, garlic powder, sea salt and pepper. I cooked them over medium heat for about 10 minutes or until the zucchini was tender.
Very simple, but healthy and delicious.
