Got Mushy Bananas?

Don't throw them out!  Use them to make muffins or banana bread.  If you aren't up to making muffins or bread right away you can always smush them in a ziploc bag and place them in the freezer for later use!



Here's the recipe I use most often.  I can't remember where I got it from, but have used it for many years. 

Banana Muffins

Ingredients:
2 Large Bananas or 3 if they're kinda small
1/3 cup melted butter
1 egg
1 1/2 cups All Purpose Flour
1 tsp Baking Powder
1/2 tsp Salt
3/4 cup white granulated sugar

Directions:
  • Pre-heat oven to 350 degrees.  Spray muffin pans with Pam non stick spray or use liners. (I use liners AND spray with Pam.) 
  • Mix the flour, baking powder and salt together
  • Mix together the bananas, egg, sugar and melted butter in a large bowl. 
  • Fold in flour mixture and mix well until smooth.
  • Bake for about 15 minutes for mini muffins and approximately 25-30 minutes for larger muffins.
