Good morning, friends! It's going to be another funky week for my bunch. We have the possibility of snow or freezing rain mid-week. After Hurricane Helene our generator had a part to break and in my mind we had until next hurricane season to get it fixed. It never crossed my mind that we could lose power if we had an ice storm. We ordered the part and it should come in on time, but I have no idea how to actually change it. This will be interesting. Hopefully, we won't even need it!
Anyway, I am focusing on using what we have instead of making a new trip. I'm planning a late week trip to Publix/Aldi, depending on the weather.
I stopped in at Food Lion this week in search of the $1.50 bags of potatoes that were on sale, but no dice. They were sold out. I did find these Perdue Short Cuts on clearance. I got a total of $3.50 cash back from Ibotta ($1.25/1 for each one and a $1 Perdue Short Cuts bonus.) $1.06 each is not a bad price and makes for a super easy meal this week.

Instant Pot Spaghetti with Caesar Chopped Salad and garlic toast
Slow Cooker Salisbury Steak Meatballs with Mashed Potatoes and Green Beans
White Chicken Enchiladas with refried beans and avocados
Beef & vegetable soup with grilled cheese sandwiches
Crispy Ground Beef Tacos with guacamole and pico de gallo
Sloppy Joes with carrots and celery served with homemade ranch dip
